Raw Cow's Milk Cheese from Virginia
An American farmstead original from the award winning cheese maker at Meadow Creek Dairy! Whitetop, a very limited production cheese, is surface ripened with a tender, downy white rind. The paste is ivory-colored, with a velvety, soft butter texture and delicate creamy tangy flavor. Pair with with Champagne, a slightly acidic Riesling, or fruity Sauternes. Simlilar cheeses are: Brillat-Savarin, Pierre Robert, Gratte-Paille, Explorateur.
