This multi-award winning cheese with its rich mellow flavors, soft texture, and natural rind was one of only ten cheeses chosen to represent American raw milk cheeses for Slow Foods, U.S.A. The aroma may remind you of a damp cellar mingled with creme fraiche or buttermilk. The taste is mild with a pleasant acidity, and interesting complexity with a tart, tangy, slightly salty finish. Pairs well with a rich and creamy Chardonnay or a light bodied red Burgundy.
