Raw Cow's Milk Cheese from Minnesota
Made with raw milk and named after the type of sandstone that forms the caves
the cheese is aged in. Each wheel is hand selected during each of the four
grading steps, and then cave aged a minimum of 100+ days.
The flavor profile has been described as “complex, complicated yet delightfully
intimate™”. A deliciously creamy mouth feel and pronounced piquant sharp are its
hallmark characteristics.
