RAW Cow's Milk Cheese from California

A Semi hard raw milk cheese with natural rind and mild buttery taste. Made in the style of Fontina, but with more salt and a firmer texture. Straw color, it is a wonderful cheese on its own, but also as a topping for soups or salads. It grates well, and melts easily. 1st Place best in it class winner 2008.
