This is a cheese with a cooked and kneaded texture produced only with raw whole milk from of the Modicana breed of cattle fed on hay. It is actually a particular variety of Caciocavallo, in a rectangular shape. It is aged for several months and is both flavorful and piquant. It is generally a very tasty cheese, sharp with a strong aroma, dense on the palate, with a full, rich and lasting flavour on the salty side Pair with full bodied aged red wines |
