HUMBOLDT FOG

Cow's Milk Cheese from CALIFORNIA

An elegant, soft, surface ripened cheese. The texture is creamy and lush under the rind and dense yet fluffy on the interior. The flavors are and luscious with a subtle tangy, sweet finish. Each handcrafted wheel features a ribbon of edible vegetable ash along its center and a coating of ash under its exterior gives a distinctive, cake-like appearance. Pair with Sauvignon Blanc, Sancerre or a medium-bodied Pinot Noir.
