This experimental cheese is a HUGE hit right now around the Sweet Grass dairy!

This cheese started out being nothing more that an answer to "What would happen if we did this," but without question, this might be the best limited edition goat cheese of the summer.  It started as traditional batch of Holly Springs, rubbed it in rosemary-scented grapeseed oil, and then rolled each wheel in a mix of dried basil and rosemary.  Each wheel has been aged four months, and the result is extraordinary.  A very tangy goat, somewhat similar to Feta,  hinted with woodsy flavors that the robust herbs bring off the rind makes this cheese one not to miss.  Don't miss out!
