Handcrafted in limited quantities and cellar cured for 6 months, this firm-bodied cheese with an ivory interior has a satisfying sharp bite and a lingering sweet finish. Purists will enjoy it on its own as a table cheese; but it shreds and grates well, and adds tremendous depth of flavor to cooked and baked dishes. Pair with Rioja, Manzanilla or your favorite Spanish red.
