CORNISH YARG

Cow's Milk Cheese from England

This gem boasts a crumbly texture and slightly acidic flavor balanced by a creamy mouth feel reminiscent of younger cheddars from the region. Each wheel is dry salted by hand (instead of a dip in brine) and then nettle leaves are pressed into the  cheese which presents a lovely distinctive appearance. Chardonnay brings out the best out in this cheese.
