Raw Cow's Milk Cheese from New Hampshire
Based on an old Alpine recipe, using raw milk from their own herd of cows, this is not your ordinary Swiss Cheese. It is handmade and the milk quality shines through bursting with a buttery, nutty, sweet flavor and with a firm texture. Considered a Vegetarian cheese as it is made with vegetable rennet. Delicious match for big, oaky Chardonnays.
