A special & limited release from Sweet Grass Dairy, this is a delicious and unique blue cheese that is firm yet creamy. It is well balanced and exemplifies the quality of the cow's milk of the award winning cheeses that Sweet Grass is known for. Like most blues, it is slightly on the salty side, but is is very rich and full flavored that build into a slight, almost cheddary finish. This cheese will pair well with a white wine that has hints of apples, pears or similar. It also works nicely with a medium bodied fruit forward red, or any late harvest varietal...Magnum sells this late harvest Chardonnay from Bouchaine in Napa Valley that I just flipped for with it. (and I'm not a Chard. drinker)
