Joe Widmer  (one of only 8 certified Wisconsin Master Cheesemakers in America) takes the old-fashioned route making this award winning gem. Using a 5 hour production  technique and 6 years of aging results in a rich full flavored cheddar with hints of sweet caramel and a sharp yet very well balanced finish.
